The Charmat tank production method combines the traditions of French winemaking with modern Russian winemaking techniques. Grapes are harvested at 16-18% sugar content, and the pressing process is gentle, without rubbing, to avoid extracting polyphenols from the skins. The fermentation process takes place in acratophores, which allows us to produce batches with stable flavor and aroma characteristics that will appeal to everyone's tastes.
