The Charmat tank production technology combines the traditions of French winemaking with modern Russian winemaking techniques. Grapes are harvested at 16-18% sugar levels, and pressing is done delicately, without crushing the berries to avoid extracting polyphenols from the skins. Fermentation takes place in acratophores, allowing for the production of batches with stable flavor and aroma characteristics that will appeal to everyone.
